Bitter Apricot Kernels contain high amygdalin and Vitamin B17 and amygdalin which is a naturally occurring cyanide (cyanogenic glycoside). Debittered apricot kernels are produced from Bitter Apricot Kernels and blanched. Debittered Apricot Kernel is mostly used in confectionary for persipan production.
